Cauliflower & Halloumi grilled cheese sandwiches – Vegetarian and gluten – free friendly!

So I made these on a whim last week, they were a bit rich for my liking but whilst out for brunch with a friend, I was telling him about them and he informed me that Cauliflower has been named as a super food. Mmm makes sense, low in calories high in nutrients and I did notice it was more expensive than usual 😉

Have a read and see if it might be up your alley. They are Gluten – free and vegetarian (not vegan).

Ingredients:
Cauliflower crust bread:
1 head of Cauliflower
2 eggs
Dash of salt and pepper
1/2 cup mozzarella cheese

Grilled cheese fillings
100g Halloumi (you could instead just use more mozzarella cheese)
Handful of sundried tomatoes
1 TBSP butter (Aldi make inexpensive,  organic butter)

Method:
Cauliflower crust bread:

  •  Chop Cauliflower into florets and place into the blender. Blend until all the Cauliflower is finely chopped.
    Place chopped Cauliflower into a bowl and cook in the microwave for 10 minutes or so until fully cooked through.
  • Whilst the Cauliflower is cooking in the microwave preheat the oven and thoroughly grease a baking tray. I didn’t use baking paper as I was worried the ‘bread’ sticking.
  • Once cooked, place Cauliflower into a clean tea towel or cheesecloth and squeeze out all excess water. DO NOT SKIP THIS STEP IT IS SUPER IMPORTANT.
  • Place Cauliflower,  eggs and cheese into a bowl,  mix and then add your seasoning (go easier on the salt than you think you should).
  • Spread mixture onto the baking tray and make your bread slices. Bake for about 15 minutes. They will turn golden brown

  • Take out of oven and let them rest for 15 minutes. ANOTHER VERY IMPORTANT STEP. It will allow the cheese in the mixture to cool and set, ensuring you will be able to lift them from the tray without breakages.
  • Place the butter into a fry pan and grill the ‘bread’ until golden brown like any good cafe worth it’s salt would :p
  • I also grilled the Halloumi at the same time and then placed my Halloumi and sun dried tomato on a slice of ‘bread’ topped it with another slice of ‘bread’ then sliced in half.

N.B. I didn’t grill mine in the butter and one half of the sandwich was enough for me.  Husband was happy to consume my half as well as his grilled cheese sandwich and Toddler-child even ate hers happily!
